What Is On My Plate? - Sage Rubbed Pork Chops with Apple Slaw

Today we are on a one of those rare days off courtesy of the Muslim holiday of Eid Al Adha, so I had some time to come with something different for diner. Although I know it is not Muslim at all I was craving something with pork and since we had pork chops in the freezer I though, what the hey.

As usual I relied on Food Network's wonderful website for some suggestions and found this great recipe for pork chops by Ellie Krieger, that I think anyone who loves pork will enjoy. My husband said that he enjoyed the vegetables just as much as he enjoyed the pork. I accompanied it with a bit of garlic infused jasmine rice. The following are some progress shots I took while preparing the food as well as a final result shot. I can sincerely say it was delicious and not complicated at all.

I think the most labor intensive part of this recipe is the slicing of the veggies. If you have a food processor that can slice veggies thin then you will get this done in no time. I, unfortunately do not have one of those wonderful machines right now so it took me about half and hour to prepare everything, but it was very much worth it.
